Soba Noodle Stir Fry [Video]

My friend Eileen is applying for a job teaching vegan cooking lessons in New York City as a part of the Cancer Project. As part of her application she recorded this video of herself making some soba noodle stir fry. The ingredients and a recipe are below. In Worcester you can definitely find all of these ingredients at the Living Earth at 232 Chandler Street. They’re open Monday through Friday from 9am to 9pm. On Saturdays they close at 7pm and on Sunday they close at 6pm.

Yield: Approx. 6 cups

Ingredients

  • 1/2 pound Soba noodles
  • 2 tablespoons sesame oil
  • 2 teaspoons ginger, minced
  • 4 large cloves garlic, peeled and minced
  • 4 leaves bok choy (leaves and stems) cut into chiffonade
  • 1 red pepper, cut into julienne (thin slices)
  • 1 bunch scallions, sliced into 1/4 inch diagonal slices
  • 1 1/2 cups bean sprouts
  • 1 jalapeno pepper, minced
  • 1/4 cup shoyu
  • 1 tablespoon toasted sesame oil
  • salt

Procedure

  1. Cook noodles, rinse in cold water, drain, and set aside.
  2. Heat large wok, add oil, ginger and garlic. Cook 1 minute.
  3. Add bok choy stems, then add leaves, red pepper, and scallions. Cook until pepper is just tender. Add sprouts and jalapeno.
  4. Add shoyu and toasted sesame oil. Season with salt to taste. Add noodles. Mix well and serve.

Vegan Cooking on Snow Ghost Community Show

Have you seen the Snow Ghost Community Show? It’s totally weird. Nothing compares to it. The episode that aired this past weekend featured two vegans sharing some homemade dishes and vegan cooking.

Rachel (of Unapologetic Optimist fame) and Allison brought along some some tasty-looking vegan goodies and talked about vegan cooking with hosts Mike Benedetti and Bruce Russell. If you haven’t seen the Snow Ghost Community Show before, it’s weird as heck. But its weirdness is what makes it so funny. Snow Ghost (slave name: Bruce) has a sense of humor unlike anyone else. He weaves together long pauses, strange puns, and bouts of mumbling to create a hilarious weekend talk show. My favorite part: When co-host and straight-man Mike asks for Snow Ghost’s final thought, Mike waits a few seconds but when Bruce doesn’t respond, Mike clarifies that he wants Bruce to actually say his final thought out loud, not just think it. Great stuff!

Vegan Cooking on Snow Ghost Community Show

Besides Snow Ghost’s major burn on Allison’s cupcakes, the hosts both seem generally impressed by the veg food. They all chow down on some fried pot stickers, vegan mac ‘n cheese, cupcakes, and some chocolate pudding too.
