Mutual Self-Betterment, Day Three

Today is Day Three of my and Matt Fox’s Mutual Self-Betterment Challenge. I have successfully eaten 2 fresh fruits every day for 3 days now, despite how much I hate eating fruits. I haven’t seen video proof yet, but I have talked to Matt Fox and he is doing well as a vegetarian. He said he has had no problems whatsoever, it has been a cake-walk. I’ll believe it when I see a video!
Anyway, here is today’s video of me eating fruit:
Thanks to everyone who has been suggesting fruits for me. I think tomorrow I’ll go for something exotic like passion fruit or dragon fruit. Or both! (Yuck!) Are there any other fruits I should try?

would it be cheating to make a fruit smoothie? You basically can’t go wrong with a smoothie, they are hell of easy to make (especially when you already have a VitaLife Nutrition Center 5000 or something) and you can put in things like flax oil for Omega 3s or soy protein powder or echinacea as well and then those things don’t taste gross like they usually do. To make a fruit smoothie, put all of the fruit you can find in the blender with some ice and orange juice or apple juice or soy yogurt or something and then just drink it. Come to think of it, you should probably blend it first…

that is a dragon fruit. i think the signs at mekong might say “thanh long”. watermelon would be an equally mild choice but i think dragon fruit would make a better video.
Does the fruit have to be raw? IF not, here are some cooking ideas for fruit! And yeah- Matt is right- red delicious apples are really gross!
-Applesauce- really easy- just cut apples (you can peel the skins off if you want) into big chunks, let it simmer in a liquid (juice or water) for at least 15 minutes or until they get soft. Mash them with a potato masher or put in the blender (add any liquid to make it more smooth). Add cinnamon!
-Roasted pears- (we made these for a roasted pear salad at Millennium) – cut into slices and toss in some balsamic vinegar, olive oil (or any oil really), salt, pepper, sweetener (sucanat, sugar, maple crystals, etc), and roast them on a cookie sheet under a broiler or flame if possible until they get slightly soft!
-Tomatoes are fruit! If you dice tomatoes and mix them with some balsamic vinegar, olive oil, basil, salt & pepper, you’ve got bruschetta!
-Freeze some banana chunks and put them in the blender with other fruit and you’ve got hippy vegan ice cream!
